Everything you need:

  • Silken tofu (or plant milk – see swaps)
  • Fresh spinach
  • Frozen mango chunks
  • Banana
  • Medjool dates (for natural sweetness)
  • Hemp seeds
  • Fresh ginger
  • Fresh turmeric (or ground)
  • Cinnamon
  • Lime juice
  • Ice cubes
  • Water (if using tofu)

Make It Your Own: Swaps & Add-Ins

  • No silken tofu? Use 1 cup unsweetened plant milk (skip the water)
  • No fresh ginger/turmeric? Use 1/2 tsp ground ginger and 1/4 tsp ground turmeric
  • Want more greens? Swap spinach for kale or mixed baby greens
  • Need more protein? Add a scoop of vanilla or unflavored protein powder
  • Love microgreens? Toss in 1/4 cup sunflower or broccoli microgreens
  • Adjust sweetness: Add more dates or use maple syrup instea

How to Make It

Step 1: Layer Ingredients Add ingredients to your blender in this order for best blending: water (if using tofu), tofu or plant milk, lime juice, dates, spinach, spices, hemp seeds, mango, banana, ice.

Step 2: Blend Start on low speed, using the tamper to push ingredients toward the blade. Gradually increase speed until smooth and creamy.

Step 3: Enjoy Pour into a glass and drink immediately for best flavor and texture.

Use frozen mango – Keeps your smoothie cold and thick without watering it down

Fresh ginger = better flavor – Ground works in a pinch, but fresh ginger gives that zingy brightness

Start with less sweetener – You can always add more, but the mango and banana are naturally sweet

Can I make this Mango Green Smoothie without bananas? Absolutely!  Avocado, non-dairy yogurt or even frozen zucchini will create that same  creamy texture.

Can I make this ahead? Smoothies are best fresh, but you can prep ingredients the night before. Just store everything except ice in the fridge, then blend in the morning.

Can I use regular tofu instead of silken? Silken tofu blends smoother, but regular soft tofu works. Just make sure it’s fresh and not grainy.

What if I don’t have a high-powered blender? Chop your ginger and turmeric into smaller pieces and blend a bit longer. You might need to add a splash more liquid.

Can I skip the dates? Yes! The mango and banana provide sweetness. Taste and add maple syrup if needed.

How do I store leftovers? Smoothies separate when stored, so they’re best enjoyed right away. If you must save it, store in the fridge for up to 6 hours and shake/stir before drinking.

Ingredients

1/4 cup silken tofu or 1 cup plant milk, such as almond, oat, flax or soy milk

2 cups spinach, kale or mixed baby greens

1/2 cup frozen mango chunks

1/2 large banana, peeled

2 medjool dates, pits and stems removed

2 TB hemp seeds

1/2 inch piece of fresh turmeric, peeled and roughly chopped or 1/4 tsp ground

1/2 – 1 inch piece of fresh ginger, peeled and roughly chopped, or 1/2 tsp ground

1/4 tsp ground cinnamon

1 tsp lime juice, freshly squeezed

4 ice cubes

water as needed

Instructions

In the carafe of a blender (preferably high powered), add the ingredients in the following order:

  • Water. Start with ¼ cup. (Omit if using plant milk instead of silken tofu)
  • Tofu (or plant milk)
  • Lime juice
  • Pitted dates
  • Spinach or greens of choice
  • Spices –  turmeric, ginger and cinnamon
  • Hemp Seeds
  • Frozen Mango
  • Banana
  • Ice cubes

Begin blending on low speed, using the tamper to push ingredients toward the blade.  Slowly increase the speed until a smooth consistency is achieved.  Transfer smoothie to a large glass and enjoy!
