Easy Vegan Taco Meat (Oil-free!)

This vegan lentil taco meat is savory, budget-friendly, and ready in 30 minutes. It’s perfect for Taco Tuesday (or any day!), and works in tacos, burritos, nachos, taco salads, and more. Make a batch at the start of the week and thank yourself all week long.

Taco Tuesday tradition: This has become our weekly ritual. We pile it high with all the fixings – fresh tomatoes, sautéed peppers and onions, refried beans, guacamole, salsa, and vegan queso. Sometimes we do Nacho Friday too, because why not?

Ingredients

Start Here: The GOOD Taco Meat

Everything you need:

  • Onion (yellow, white, or red)
  • Fresh garlic
  • Carrots (shredded)
  • Cooked lentils (canned brown or green work great)
  • Vegetable broth
  • Tomato paste
  • Spices: cumin, chili powder, oregano, chipotle powder
  • Tamari (or soy sauce)
  • Red wine vinegar
  • Sweetener (coconut sugar, maple syrup, or brown sugar)
  • Nutritional yeast
  • Hemp seeds (adds texture – keeps it from getting mushy)

 

Make It Your Own: Swaps & Variations

  • No hemp seeds? Use cooked quinoa or skip it
  • No red wine vinegar? Apple cider vinegar works
  • Want it spicier? Add more chipotle powder or a pinch of cayenne
  • No nutritional yeast? It’s optional but adds a rich, savory depth
  • Fresh lentils: Cook your own in an Instant Pot or on the stovetop
  • Different lentils? Stick with brown or green – red/yellow get too mushy

How to Make Vegan Taco Meat

Step 1: Sauté the Aromatics Heat a large non-stick or cast-iron skillet over medium-high heat. Add onions, reduce heat to medium, and cook 3-4 minutes, stirring occasionally. Use a splash of veggie broth if they start to stick (since this is oil-free). Toss in garlic and cook 3 more minutes. Mix in shredded carrots and cook 2-3 minutes.

Step 2: Season the Lentils Add lentils, all the spices, tamari, and sweetener to the skillet. Stir until lentils are coated with all those gorgeous seasonings. Add veggie broth and tomato paste. Reduce heat and simmer about 5 minutes, stirring occasionally.

Step 3: Create the Texture Remove from heat. Using the back of a fork, mash about 1/3 of the lentils. This creates that ground meat texture – some chunky, some broken down. Perfect!

Step 4: Finish It Stir in red wine vinegar, nutritional yeast, and hemp seeds. Taste and adjust seasonings as needed.

Here’s the thing: The mashing step is key. Don’t skip it! It’s what makes this taste and feel like real taco meat instead of just… lentils with spices.

Refrigerator: Up to 5 days in an airtight container

Freezer: Up to 3 months – perfect for batch cooking! Double or triple the recipe and freeze in portions. Just thaw and reheat when taco cravings hit.

Reheating tip: Add a splash of water or veggie broth when reheating to keep it from drying out.

FAQ

Can I use red lentils? Stick with brown or green lentils – red and yellow lentils break down too much and get mushy. You want some texture here!

Is this really oil-free? Yes! The onions cook in their own moisture (with a splash of veggie broth if needed). No oil necessary.

Can I make this in advance? Absolutely! It actually tastes better the next day when the flavors have had time to meld. Make it Sunday, enjoy all week.

How do I make it less spicy? Skip the chipotle powder or use just a tiny pinch. The chili powder isn’t super spicy, so you’ll still get good flavor.

Can I use this in non-Mexican dishes? Sure! It’s great on baked potatoes, in grain bowls, or mixed into pasta sauce for extra protein.

1/2 cup diced onion

3 cloves garlic, minced

1/2 cup shredded carrots

1 tsp cumin

1 tsp chili powder

1/2 tsp oregano

1/8 tsp chipotle powder

2 cups cooked lentils, brown or green

1/3 cup vegetable broth

2 TBSP tomato paste

1 1/2 TBSP tamari

1 TBSP nutritional yeast

2 tsp coconut sugar, or sweetener of your choice

1 tsp red wine vinegar

2 TBSP hemp seeds

Instructions

  1. Heat a large non-stick or cast-iron skillet over medium high heat.  Add the onions and reduce the heat to medium.  Allow the onions to cook for 3-4 minutes, stirring occasionally. Add some vegetable broth, a teaspoon at a time if needed to keep the onions from burning. Add the garlic and saute for another 3 minutes. Add the shredded carrots and cook another 2-3 minutes.                            
  2. To the skillet add the lentils, spices, tamari and sweetener.  Stir until well combined and the lentils are nicely coated in the seasonings. Add the vegetable broth and tomato paste.  Reduce the heat and simmer for about 5 minutes, stirring occasionally.  Remove the skillet from the heat.                          
  3. Using the back of a fork, mash about 1/3 of the lentils until the texture is similar to ground meat.                                                                                                     
  4. Stir in the red wine vinegar, nutritional yeast and hemp seeds. Adjust the seasonings as desired.
